The Savoy Scholar's Old Fashioned Mocktail

Yields: 1 serving Prep time: 5-7 minutes (includes tea steeping)

Ingredients:

• 2 Savoy Tea Co. Gentleman and Scholar tea sachets (or 2 heaping teaspoons loose leaf)
• 4 oz freshly boiled water (212°F)
• 1-2 teaspoons 100% pure maple syrup
• 2 dashes of your favorite aromatic bitters (many non-alcoholic bitters are available!)
• Orange peel, for garnish
• Luxardo cherry (or other quality cocktail cherry), for garnish
• Ice

Instructions:

1. Brew the Tea: Steep the Gentleman and Scholar tea sachets (or loose tea) in 6 oz of freshly boiled water (212°F) for 4-5 minutes. This creates a rich, concentrated tea base.
2. Strain (if using loose tea) and Chill: Once steeped, remove the sachets or strain the loose tea. Allow the tea concentrate to cool slightly, or for a quicker chill, place it in the refrigerator for a few minutes.
3. Mix the Mocktail: In a sturdy rocks glass, combine the brewed Gentleman and Scholar tea, maple syrup, and bitters.
4. Add Ice: Fill the glass with ice.
5. Stir: Stir the mixture gently for about 15-20 seconds to combine and chill thoroughly.
6. Garnish: Express the oils from an orange peel over the drink by twisting it, then run it around the rim of the glass and drop it in. Add a cherry.
7. Serve & Celebrate: Present this distinguished drink to Dad and toast to him!
